Catching up with loved ones? Follow the great British tradition of afternoon tea, serving home-baked goodies on your best china

What a difference some sunshine and a little freedom makes. Now that summer is finally here, it’s time to really enjoy being in the garden. Afternoon tea outdoors is a wonderful way to catch up with friends and family – less rushed than lunch and you can do any baking in advance so no one’s stuck in the kitchen. Not a Bake Off contender? There is no shame in ‘bought in’ – just serve with a decent pot of tea and some good company.

Setting the scene is essential. Think posh picnics a la Glyndebourne and include some special treats. Layer on the comfort with picnic rugs, cushions and whatever home comforts you care to bring from indoors, then ferry out the courses at your leisure.

Pour the perfect cuppa

Let’s face it, tea always tastes better served in a china cup so bring out your finery. No need to worry about breakages – served on a blanket on the ground, there’s a nice soft surface for cups and plates to fall on to, plus it’s not too far to go to refill the kettle for top ups. 

Milk first? Tea first? The rights and wrongs are up there with the dilemma of whether the jam or cream should go first on your scone, but actually it’s how you make the tea that’s most important. Always use fresh water in your kettle, running the tap a little while beforehand to get plenty of oxygen into the water which will help with the flavour. Warm the pot with a swirl of hot water then add loose tea in a diffuser or use bags (2 bags for an average pot). Pour on the water and wait for 4-5 minutes (no rushing). Remove the diffuser or bags (no squeezing, it makes the tea bitter) and pour.

A traditional afternoon tea will usually have sandwiches, scones with jam and cream followed by a selection of small cakes but go with your own menu – no one is going to complain if you serve up a generous slice of cherry pie or some tasty home-made savouries using fresh home-grown produce.
